The KISS adage is good one, and we did used to do it using a setup as simple as that. The only thing that we've found from tools like ipDTL (and to a lesser extent, Cleanfeed) is that we have a world more options (for instance, we can use the digital software mixer built into ipDTL to manage our output rather than having to take a full blown desk with us.
