I've been using "Rotter" (Recording Of Transmissions..)

Runs on your favourite Unix box, and uses the JACK toolkit (which
we already use for various other purposes). Minimal load, writes a
new mp3 file every hour. Just arrange for the output files to live
in a directory that is accessible by your web server, and you've
got a fairly powerful logging tool.

Probably not one for people who prefer a pointy-clicky interface
rather than a command line, but I like it...
